Product Development and Bespoke Products

In addition to our own labelled products we also make a small amount of white label products. We love nothing better than to be working collaboratively on new product development.

We can assist with every step of the supplychain – the sourcing of ingredients, recipe and process development, packaging design and labelling advice, third party contract processing and the establishing of comprehensive HACCP plans as part of your Food Safety Management System.

Drawing on individual experience and talent from within the business we are able to offer a range of consultancy services. We also have a network of professionals that we can call on within the industry to assist with any project.

We can assist with any of the single elements covered by new product development:

  • sourcing of ingredients
  • recipe and process development
  • packaging design
  • labelling advice
  • establishing contract processing
  • HACCP plan writing
  • revisions of Food Safety Management Systems.

We can also offer comprehensive advice on livestock sourcing, especially on the subject of pigs. We recently managed the latter stages of a Welsh Government supply chain efficiency project for the Pedigree Welsh Pig Society. The work involved a breed mapping exercise in collaboration with the British Pig Association, a feed trial with Harper Adams University, a DNA mapping project with Aberystwyth University as well as organoleptic testing of pork meat with a range of partners which included the Welsh Institute of Sustainable Development at Swansea University, Food Centre Wales, Zero 2 Five Food Industry Centre and the School of Veterinary Science at Bristol University.

We can also assist with the marketing of product through hands-on demonstrations, workshops & seminars. We have worked closely with the Slow Food movement on the promotion of specialist meat products which have resulted in speaking engagements at national and international events. We also drafted the EU submission for Protected Food Name status for Traditionally Reared Pedigree Welsh Pork.

Courses & Training


We offer a variety of courses both to our customers and to the industry. Courses can be tailored to each specific need. One-to-one and small numbered classes can be hosted at our facility or we can run larger courses on-site.

We offer a variety of introductory butchery courses which teach knife skills, safety techniques and basic anatomy. We can also create bespoke courses looking at carcass and cut utilisation for pork, beef and lamb. Additionally, introductory courses for sausages, cured, cooked and smoked products are also available.

Bespoke courses have been run in the past for those from across the supplychain including livestock breed societies, farmer groups as well as meat professionals. Please contact Pam Thompson on for further details.

Training & Staff Development

Our technical manager provides training and staff development to a number of local, national and international meat companies.

Following in the culinary French tradition of stagiaire from 2016 we will be offering a dedicated training program. Opportunities will be offered for a period of 6-8 weeks and will allow on-the-job tuition in the daily production of charcuterie. Our training program has been born largely from the increased requests for work experience.
