Our Story

We make cured, cooked, smoked and air dried charcuterie, from scratch and in small batches. We combine our family heritage of on-farm curing with the science and skills we’ve acquired from travelling the globe and working with some of the finest meat professionals. We use this approach to produce an array of products using livestock kept to a high welfare standard, and from rare breeds whenever possible.
